Well if you take a look at a basic breakdown of all MMOs the crafting economy is almost ALWAYS the same.
Chemist is going to make a decent STEADY income due to boosts always being in demand, switched, etc.
Gunsmiths are going to have SPIKE income due to not everyone always needs a gun, but when you sell one you make a good chunk per each sold.
Tailor is going to be relatively low, because yeah clothes add stats, but once you have what you have, you generally stick with what you have.
Engineer is going to be between Chemist and Gunsmith, because people will want to switch out attachments from time to time, but sometimes you'll get big days.

Chemist probably makes the most money, but it costs a lot, too. Keep up with farming in STP to make sure you're never low on supplies.
Engineer also makes a steady income by selling ammo. Attachments are bought frequently as well, and there are always more people entering the game who will need them, and even some players who are level 50 and have been playing for a long time still need level 50 blue attachments.
I would suggest either of the two professions above. Also, Gunsmiths make AUGs that change your experience in combat and in the lobby by boosting the damage you do, how long boosts last, increase chance of goot loot from containers, etc.
All professions make cross-dependent ingredients which sell for a good amount in the auctions.

Im not sure whats the best profession because I tried only tailor and gunsmith.
Between I chose gunsmith because it is not too complicated and I craft my own weapon parts, weapon colours etc...
