Can you have more than 2 professions? Yes or No its simple.

No, you can't.

If you need more you should create another character. You also should create another character if you want to get both specialisations of same profession. By default you may create up to 3 characters on each realm.

You CAN have a 2nd profession if you spend gold bars to buy it, but it CAN'T be the same profession you already have. i.e. you can't be a ammo jockey AND a mod specialization engineer on the same character.
